- 2 chicken breasts, grilled and sliced
- 1 cup fresh pineapple, diced
- 1/2 red onion, diced
- 1 red bell pepper, diced
- 1/4 cup cilantro, chopped
- 1 lime, juiced
- Salt and pepper to taste
- 8 small corn tortillas
Instructions
- Preheat your grill to medium-high heat.
- Season the chicken breasts with salt and pepper. Grill them for about 6-7 minutes on each side until fully cooked and the juices run clear.
- After grilling, remove the chicken from the grill. Let it rest for a few minutes before you slice it up.
- In a mixing bowl, combine the diced pineapple, red onion, red bell pepper, chopped cilantro, lime juice, salt, and pepper. Mix well to create your vibrant salsa.
- Grill the corn tortillas for about 30 seconds on each side until soft and pliable.
- Assemble the tacos by placing sliced chicken on each tortilla, then top generously with the pineapple salsa. Serve immediately and enjoy!
