Ingredients

  • 2 chicken breasts
  • 1 cup fresh pineapple, diced
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • Salt and pepper, to taste
  • 8 small corn or flour tortillas
  • 1/4 cup red onion, diced
  • 1/4 cup fresh cilantro, chopped
  • Lime wedges, for serving

Instructions

  1. Preheat your grill to medium-high heat.
  2. In a mixing bowl, combine the olive oil, chili powder, garlic powder, salt, and pepper.
  3. Coat the chicken breasts with the marinade.
  4. Grill the chicken for about 6-7 minutes on each side until fully cooked.
  5. Add the diced pineapple to the grill during the last few minutes until caramelized.
  6. Remove chicken and pineapple from the grill, let chicken rest before slicing.
  7. Assemble tacos with grilled chicken, pineapple, red onion, and cilantro on each tortilla.
  8. Serve with lime wedges on the side.
