Instructions
- In a large bowl, beat 1.5 cups of softened unsalted butter until creamy.
- Gradually add in 6 cups of powdered sugar, mixing well.
- Pour in 2/3 cup of pink champagne and a pinch of salt.
- If desired, mix in pink gel food coloring and vanilla extract until you reach your desired color and consistency.
- Preheat your oven to 350°F (175°C).
- In a bowl, whisk together the flour, baking powder, and salt.
- In another bowl, cream together ¾ cup of softened butter and 1 ½ cups of sugar until fluffy.
- Add egg whites and vanilla, mixing well.
- Gradually add the dry ingredients to the wet mixture, alternating with 1 cup of pink champagne until combined.
- If using, mix in pink gel food coloring to achieve desired color.
- Divide the batter evenly into greased cake pans.
- Bake for 25-30 minutes or until a toothpick comes out clean. Let cool completely before frosting.
