Ingredients
8 oz feta cheese, crumbled
1/2 cup Greek yogurt (or cream cheese for a richer texture)
1 tbsp olive oil
1 tsp honey
1 garlic clove, minced (optional)
1/4 cup pomegranate arils
2 tbsp chopped pistachios
1 tsp lemon zest
Fresh thyme or mint, for garnish
Pita chips, crostini, or crackers, for serving
Instructions
1. In a food processor, combine feta, Greek yogurt, olive oil, honey, and garlic.
2. Blend until smooth and creamy.
3. Transfer to a serving bowl and smooth the top with a spoon.
4. Top with pomegranate arils, pistachios, lemon zest, and fresh herbs.
5. Drizzle lightly with olive oil and honey before serving.
6. Serve with pita chips or crostini.
Notes
For a sweet twist, add a drizzle of pomegranate molasses or balsamic glaze.
This dip can be made up to 1 day ahead and refrigerated — bring to room temperature before serving.
