Description
These Raspberry Coconut Magic Bars are a fruity twist on the classic 7-layer bars featuring a buttery graham crust, layers of coconut, white chocolate, almonds, and a burst of tart raspberry flavor for a chewy, gooey treat.
Ingredients
1 1/2 cups graham cracker crumbs
1/2 cup unsalted butter, melted
1 can (14 oz) sweetened condensed milk
1 cup shredded sweetened coconut
1/2 cup white chocolate chips
1/2 cup chopped almonds (or macadamia nuts)
1/2 cup raspberry jam or preserves
1/2 cup freeze-dried or fresh raspberries (optional)
Instructions
1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
2. In a bowl, mix graham cracker crumbs and melted butter. Press evenly into the prepared pan to form a crust.
3. Pour sweetened condensed milk evenly over the crust.
4. Sprinkle with shredded coconut, white chocolate chips, and nuts.
5. Dollop raspberry jam over the top and gently swirl with a knife. Add raspberries if using.
6. Bake for 25–28 minutes, until edges are golden brown and center is set.
7. Cool completely in the pan, then refrigerate for at least 1 hour before slicing into bars.
Notes
Store in an airtight container at room temperature for up to 3 days or refrigerated for up to a week.
Try with strawberry or blackberry jam for a fun variation.
For a nut-free version, replace almonds with extra coconut or crushed graham crackers.
