Ingredients

1/4 cup finely chopped pistachios
1/2 cup crushed graham crackers or digestive biscuits
Pinch of salt
Zest of 1/2 lemon (optional)
Extra crushed pistachios for coating
Instructions
1. In a medium bowl, combine ricotta, honey, vanilla extract, salt, and lemon zest (if using). Mix until smooth and creamy.
2. Stir in the crushed graham crackers and chopped pistachios until a thick dough-like consistency forms.
3. Cover the bowl and refrigerate for 30 minutes to firm up.
4. Using a small cookie scoop or spoon, roll the mixture into bite-sized balls.
