Sweet, caramelized roasted carrots served over creamy whipped feta a vibrant, elegant side dish that’s both savory and refreshing, perfect for holidays or any special dinner.
Ingredients
2 lbs carrots, peeled and cut into thick sticks or left whole if thin
2 tbsp olive oil
1 tbsp honey or maple syrup
1/2 tsp cumin
1/2 tsp smoked paprika
Salt and pepper, to taste
Whipped Feta:
6 oz feta cheese, crumbled
1/3 cup Greek yogurt
2 tbsp olive oil
1 tbsp lemon juice
1 garlic clove, minced
Optional Garnish:
Fresh herbs (dill, mint, or parsley)
Toasted pistachios or walnuts
Drizzle of honey or olive oil
Instructions
1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
2. Toss carrots with olive oil, honey, cumin, smoked paprika, salt, and pepper.
3. Spread in an even layer and roast for 25–30 minutes, flipping halfway, until tender and caramelized.
4. Meanwhile, prepare the whipped feta. In a food processor, combine feta, yogurt, olive oil, lemon juice, and garlic.
5. Blend until smooth and creamy, scraping down sides as needed.
6. Spread the whipped feta onto a serving platter.
7. Top with roasted carrots, then sprinkle with herbs, nuts, and drizzle with honey or olive oil.
8. Serve warm or at room temperature.
Notes
Try using rainbow carrots for a colorful presentation.
Add a pinch of chili flakes for a touch of heat.
The whipped feta can be made up to 2 days ahead and stored in the fridge.
