Description
Sweet, caramelized roasted carrots layered over creamy whipped ricotta and drizzled with spicy hot honey an elegant yet easy side dish or appetizer that’s as beautiful as it is flavorful.
Ingredients
1 lb rainbow or regular carrots, peeled and trimmed
2 tbsp olive oil
1 tbsp honey
Salt and black pepper, to taste
1/2 tsp smoked paprika (optional)
For the Whipped Ricotta:
1 cup whole milk ricotta cheese
2 tbsp olive oil
1 tbsp lemon juice
Salt and pepper, to taste
For Serving:
2 tbsp hot honey (or honey mixed with chili flakes)
Fresh thyme or mint leaves, for garnish
Crushed pistachios or walnuts (optional)
Instructions
1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
2. Toss carrots with olive oil, honey, salt, pepper, and smoked paprika if using.
3. Spread evenly on the baking sheet and roast for 20–25 minutes, turning halfway through, until tender and caramelized.
4. Meanwhile, make the whipped ricotta: In a food processor, blend ricotta, olive oil, lemon juice, salt, and pepper until smooth and creamy.
5. Spread whipped ricotta on a serving platter.
6. Arrange roasted carrots on top and drizzle with hot honey.
7. Garnish with thyme or mint and crushed nuts if desired.
8. Serve warm or at room temperature.
Notes
Add a sprinkle of chili flakes for extra heat.
Try using maple syrup instead of honey for a richer flavor.
Pairs beautifully with roasted chicken, salmon, or served as part of a mezze platter.
