Description
A festive, sweet-savory flatbread featuring roasted cranberries, creamy goat cheese, caramelized onions, and a drizzle of honey the perfect appetizer or light meal for holiday gatherings.
Ingredients
1 sheet store-bought pizza dough or 2 naan flatbreads
1 cup fresh cranberries
2 tbsp honey (plus more for drizzling)
1 tbsp olive oil
1 small red onion, thinly sliced
4 oz goat cheese, crumbled
1/4 cup shredded mozzarella cheese
1 tbsp balsamic vinegar
1 tsp fresh thyme leaves
Salt and pepper, to taste
Optional: chopped pecans or arugula for garnish
Instructions
1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
2. Toss cranberries with 1 tablespoon honey and roast for 10–12 minutes, until softened and bursting. Set aside.
3. In a skillet over medium heat, heat olive oil and sauté sliced red onion until softened and caramelized, about 10–12 minutes. Add balsamic vinegar and cook 1 more minute.
4. If using pizza dough, roll it out on a lightly floured surface into a rectangle or oval. Transfer to baking sheet.
5. Top with mozzarella cheese, caramelized onions, roasted cranberries, and crumbled goat cheese.
6. Sprinkle with thyme, salt, and pepper.
7. Bake for 12–15 minutes, until the crust is golden and cheese is melted.
8. Drizzle with honey before serving and garnish with chopped pecans or fresh arugula if desired.
Notes
For a shortcut, use pre-baked naan or flatbreads.
Add prosciutto or roasted nuts for a savory twist.
Pairs beautifully with a glass of crisp white wine or sparkling cider.
