Description

Ingredients
2 large sweet potatoes, sliced into 1/2-inch rounds
2 tbsp olive oil
Salt and black pepper to taste
1/2 cup crumbled feta cheese
2 tbsp honey
1 tbsp chopped fresh thyme or rosemary
Optional: crushed red pepper flakes for heat
Instructions
1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
2. Arrange sweet potato rounds in a single layer and brush both sides with olive oil.
3. Season with salt and pepper.
4. Roast for 25–30 minutes, flipping halfway through, until golden and tender.
5. Remove from oven and let cool slightly.
6. Top each round with crumbled feta cheese.
7. Drizzle lightly with honey and sprinkle with fresh thyme or rosemary.
8. Finish with a pinch of red pepper flakes if desired.
9. Serve warm as an appetizer or side dish.
Notes
For extra crispiness, broil the rounds for 2–3 minutes before topping.
You can substitute goat cheese for feta for a tangier twist.
