Ingredients
1/2 cup unsalted butter, softened
1/2 cup honey
1/4 cup brown sugar
1 large egg
1 tsp vanilla extract
1 3/4 cups all-purpose flour
1/2 tsp baking soda
1/4 tsp salt
3/4 cup shelled pistachios, roughly chopped
Flaky sea salt for topping
Instructions
1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
2. In a bowl, cream butter, honey, and brown sugar until smooth and fluffy.
3. Beat in egg and vanilla extract.
4. In a separate bowl, whisk flour, baking soda, and salt.
5. Gradually mix dry ingredients into wet ingredients until just combined.
6. Fold in chopped pistachios.
7. Scoop dough onto prepared baking sheets, spacing evenly apart.
8. Bake for 10–12 minutes until edges are set and centers are soft.
9. Remove from oven and sprinkle lightly with flaky sea salt.
10. Cool on baking sheet for 5 minutes before transferring to a wire rack.
Notes
Do not overbake to keep cookies soft.
Honey flavor deepens as cookies cool.
Store in an airtight container for up to 4 days.
