Ingredients

- 2 cups cooked chicken breast (shredded or rotisserie)
- 1 cup shredded mozzarella cheese
- 1/2 cup shredded cheddar cheese
- 2 cloves garlic (minced)
- 1/4 cup cream cheese (softened)
- 1 tablespoon olive oil
- 4 large low-carb tortillas or wraps
- 1 tablespoon fresh parsley (chopped)
- Salt and pepper (to taste)
- 1 handful baby spinach (optional)
Instructions
- Preheat a skillet or grill pan over medium heat. Drizzle in the olive oil.
- Warm tortillas in the microwave for 10-15 seconds, covered.
- In a bowl, mix chicken, mozzarella, cheddar, cream cheese, garlic, parsley, salt, and pepper. Add spinach if desired.
- Divide the mixture among tortillas, rolling them tightly.
- Cook wraps seam-side down in the skillet for 2-3 minutes per side until golden brown and the cheese melts.
- Slice and serve hot, optionally garnished with extra parsley.
Notes
Store leftovers in an airtight container in the fridge for 3-4 days, or freeze for 2-3 months. Reheat in the oven or microwave before serving.
