Description

Ingredients

34 lb (1.5–1.8 kg) beef chuck roast

2 tbsp olive oil

1 large onion, sliced

3 garlic cloves, minced

3 carrots, cut into chunks

2 celery stalks, chopped

2 cups beef broth

1 cup red wine (optional)

2 tbsp tomato paste

2 tbsp Worcestershire sauce

2 sprigs fresh thyme

2 sprigs fresh rosemary

2 bay leaves

Salt and black pepper, to taste

1 tbsp cornstarch (optional, for thickening)

Fresh parsley, chopped (for garnish)


Instructions

1. Preheat oven to 325°F (160°C).

2. Pat the beef roast dry with paper towels and season generously with salt and pepper.

3. In a large Dutch oven or heavy pot, heat olive oil over medium-high heat.

4. Sear the roast on all sides until deeply browned. Remove and set aside.

5. Add onions, carrots, and celery to the pot and sauté until softened, about 5 minutes.

6. Stir in garlic and tomato paste, cooking for 1 minute until fragrant.

7. Pour in red wine (if using), scraping the bottom to deglaze the pan.

8. Add beef broth, Worcestershire sauce, thyme, rosemary, and bay leaves.

9. Return the roast to the pot, ensuring it’s mostly submerged in liquid.

10. Cover and transfer to the oven. Braise for 3 to 3½ hours, until the beef is fork-tender.

11. Remove the beef and discard herbs and bay leaves.

12. (Optional) For thicker gravy, mix cornstarch with 2 tbsp cold water, add to the pot, and simmer until thickened.

13. Slice or shred the roast, spoon over the rich gravy, garnish with parsley, and serve with mashed potatoes or roasted vegetables.

Notes

For extra depth, use a mix of beef broth and red wine — or replace wine with additional broth.

The roast can be made ahead and tastes even better the next day.

Leftovers make excellent sandwiches or can be served over buttered noodles.

For a slow cooker version, cook on low for 8 hours or high for 5 hours.
