Ingredients

1 cup unsalted butter, softened

1 cup brown sugar, packed

1/2 cup granulated sugar

2 large eggs

1/4 cup eggnog

1 tsp vanilla extract

1 1/2 cups all-purpose flour

1 tsp baking soda

1 tsp ground cinnamon

1/2 tsp ground nutmeg

1/2 tsp salt

3 cups old-fashioned oats

Eggnog Cream Filling:

1/2 cup unsalted butter, softened

1/2 cup marshmallow creme

1 1/2 cups powdered sugar

3 tbsp eggnog

1/4 tsp ground nutmeg

1/2 tsp vanilla extract


Instructions

1. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.

2. In a large bowl, cream together butter, brown sugar, and granulated sugar until light and fluffy.

3. Beat in eggs, vanilla, and eggnog until smooth.

4. In a separate bowl, whisk together flour, baking soda, cinnamon, nutmeg, and salt.

5. Gradually add dry ingredients to wet ingredients and mix until combined.

6. Stir in the oats until evenly distributed.

7. Scoop dough by rounded tablespoons onto baking sheets, spacing 2 inches apart.

8. Bake 10–12 minutes, or until golden around the edges but still soft in the center.

9. Cool cookies completely on a wire rack.

10. To make the filling, beat butter and marshmallow creme together until smooth.

11. Add powdered sugar, eggnog, vanilla, and nutmeg; beat until fluffy and spreadable.

12. Spread a generous amount of eggnog filling onto the bottom of one cookie and top with another to create sandwiches.

13. Store in an airtight container at room temperature for up to 3 days or refrigerate for longer freshness.

Notes

For extra holiday flavor, add a splash of rum extract to the filling.

Make sure cookies are fully cooled before assembling to prevent melting the filling.

You can freeze the cookies (unfilled) for up to a month, then thaw and fill before serving.

Dust with powdered sugar or drizzle with white chocolate for a festive finish.
