Ingredients
1 lb ground beef (or turkey)
1 cup fresh spinach, finely chopped
3 garlic cloves, minced
1/2 cup breadcrumbs
1/4 cup grated Parmesan cheese
1 egg, lightly beaten
1 tsp Italian seasoning
1/2 tsp salt
1/4 tsp black pepper
1 tbsp olive oil (for cooking)
Marinara sauce, for serving
Instructions
1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
2. In a large bowl, combine ground meat, spinach, garlic, breadcrumbs, Parmesan, egg, Italian seasoning, salt, and pepper.
3. Mix gently until ingredients are just combined — avoid overmixing.
4. Roll mixture into 1 1/2-inch meatballs and place on the prepared sheet.
5. Brush or drizzle with olive oil for extra moisture.
6. Bake for 18–20 minutes, or until golden and cooked through.
7. Serve warm with marinara sauce, over pasta, or in sandwiches.
Notes
You can pan-sear the meatballs before baking for a crispier crust.
Swap beef for ground chicken or turkey for a leaner option.
Freeze uncooked meatballs on a tray, then transfer to a bag for easy future meals.
