Ingredients

- 1 cup spinach (or other leafy greens)
- 1/2 cup cream cheese
- 1/2 cup shredded cheese (cheddar or mozzarella)
- 1/4 cup sun-dried tomatoes (chopped)
- 2 cloves garlic (minced)
- Salt and pepper to taste
- 4 pieces beef steaks (flank, skirt, flat iron, or top round)
- Olive oil (for brushing)
- Fresh herbs (optional, for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- Mix together the cream cheese, shredded cheese, garlic, sun-dried tomatoes, and spinach in a medium bowl. Season with salt and pepper.
- Pound the beef steaks to about 1/4 inch thick using a meat tenderizer.
- Spread the filling evenly over the steaks, leaving a half-inch border.
- Roll the steaks tightly, tucking the sides in, and secure with toothpicks if needed.
- Brush the outside of the pinwheels with olive oil and place seam-side down on a baking sheet.
- Bake for 20-25 minutes, or until nicely browned and cooked to your desired doneness.
- Slice into bite-sized pieces and serve warm, garnished with fresh herbs if desired.
Notes
Try adding different ingredients to the filling for variety, such as olives or feta cheese.
