Description
Creamy mashed potatoes baked into crispy golden nests and filled with a savory mix of cheese, bacon, and green onions a fun, comforting appetizer or side dish that everyone will love.
Ingredients
3 cups mashed potatoes (cooled)
1/2 cup shredded cheddar cheese
1/4 cup grated Parmesan cheese
1 large egg
1/2 tsp garlic powder
1/2 tsp salt
1/4 tsp black pepper
1/2 cup cooked crumbled bacon
1/4 cup sour cream
2 tbsp chopped green onions
Nonstick cooking spray
Instructions
1. Preheat oven to 400°F (200°C) and lightly grease a muffin tin with cooking spray.
2. In a bowl, combine mashed potatoes, Parmesan, egg, garlic powder, salt, and pepper.
3. Scoop portions into the muffin tin and press the centers down to form small nests.
4. Bake for 20–25 minutes, until golden and crisp around the edges.
5. Meanwhile, mix cheddar cheese, bacon, sour cream, and green onions in a small bowl.
6. Remove nests from the oven and spoon the filling mixture into each one.
7. Return to the oven for another 5 minutes, just until the cheese is melted.
8. Let cool slightly before removing from the tin and serve warm.
Notes
Add finely chopped broccoli or cooked chicken for a heartier version.
Can be made ahead and reheated before serving.
Perfect as a side for steak, chicken, or holiday meals.
