Description
This Shaved Rainbow Carrot Sesame Salad is a vibrant, crunchy, and refreshing side dish made with ribbons of colorful carrots tossed in a nutty sesame dressing simple, light, and bursting with flavor.
Ingredients
4 large rainbow carrots (purple, orange, yellow, white)
2 green onions, thinly sliced
2 tbsp toasted sesame seeds
1 tbsp chopped fresh cilantro
**For the dressing:**
2 tbsp rice vinegar
1 tbsp soy sauce (or tamari)
1 tbsp toasted sesame oil
1 tbsp olive oil
1 tsp honey (or maple syrup)
1 tsp grated fresh ginger
1 small garlic clove, minced
Pinch of red pepper flakes (optional)
Instructions
1. Using a vegetable peeler or mandoline, shave carrots into long, thin ribbons and place them in a large bowl.
2. Add sliced green onions, sesame seeds, and cilantro to the bowl.
3. In a small bowl or jar, whisk together rice vinegar, soy sauce, sesame oil, olive oil, honey, ginger, garlic, and red pepper flakes until well combined.
4. Pour the dressing over the carrot ribbons and toss gently to coat.
5. Let salad sit for 10–15 minutes to allow flavors to meld and carrots to slightly soften.
6. Taste and adjust seasoning with extra soy sauce or vinegar if needed.
7. Serve chilled or at room temperature, sprinkled with extra sesame seeds.
Notes
Add sliced cucumber or shaved radishes for extra crunch and color.
For a heartier salad, top with shredded rotisserie chicken or tofu.
This salad is best enjoyed the day it’s made but can be refrigerated for up to 24 hours.
