Description
A comforting Thai-inspired soup featuring tender dumplings simmered in a rich coconut curry broth with aromatics, veggies, and fresh herbs cozy, fragrant, and deeply satisfying.
Ingredients
1 tbsp coconut oil
1 small onion, diced
3 garlic cloves, minced
1 tbsp fresh ginger, grated
2 tbsp red curry paste
4 cups chicken or vegetable broth
1 can (13.5 oz) coconut milk
1 tbsp soy sauce or fish sauce
1 tsp brown sugar
12–16 frozen dumplings (potstickers or gyoza)
1 cup sliced mushrooms
1 cup baby spinach
1 tbsp lime juice
Chopped cilantro or green onions (for garnish)
Chili oil or red pepper flakes (optional)
Instructions
1. Heat coconut oil in a large pot over medium heat.
2. Add onion and sauté until softened.
3. Stir in garlic and ginger; cook until fragrant.
4. Add red curry paste and cook for 1 minute to release flavor.
5. Pour in broth and coconut milk, stirring to combine.
6. Add soy sauce and brown sugar; bring to a gentle simmer.
7. Add dumplings and mushrooms to the soup.
8. Simmer for 6–8 minutes until dumplings are cooked through.
9. Stir in spinach until just wilted.
10. Remove from heat and add lime juice.
11. Garnish with herbs and chili oil if desired, then serve hot.
Notes
Use vegetable dumplings to keep this soup vegetarian.
Add shrimp or shredded chicken for extra protein.
Adjust curry paste to control spice level.
