Description
A bold, flavorful bowl inspired by Mexican street corn juicy seasoned chicken served over rice with charred corn, creamy lime sauce, cotija cheese, and fresh toppings.
Ingredients
1 lb boneless skinless chicken breasts, diced
1 tbsp olive oil
1 tsp chili powder
1/2 tsp smoked paprika
1/2 tsp garlic powder
Salt and black pepper to taste
2 cups cooked rice
1 1/2 cups corn kernels (fresh, frozen, or canned)
1/4 cup mayonnaise
1/4 cup Greek yogurt or sour cream
1 tbsp lime juice
1/2 tsp chili powder (for sauce)
1/3 cup crumbled cotija cheese
1/4 cup chopped fresh cilantro
Lime wedges (for serving)
Instructions
1. Season chicken with chili powder, smoked paprika, garlic powder, salt, and pepper.
2. Heat olive oil in a skillet over medium-high heat.
3. Cook chicken for 5–7 minutes until golden and fully cooked; remove and set aside.
4. In the same skillet, add corn and cook until lightly charred.
5. In a small bowl, whisk together mayonnaise, Greek yogurt, lime juice, and chili powder.
6. Assemble bowls with a base of rice.
7. Top with cooked chicken and charred corn.
8. Drizzle with creamy lime sauce.
9. Finish with cotija cheese, cilantro, and a squeeze of fresh lime before serving.
Notes
Grilled chicken works great for extra smoky flavor.
Swap rice for cauliflower rice to make it low-carb.
Add sliced jalapeños if you like extra heat.
