Ingredients

  • 1 lb chicken breast, cut into bite-size pieces
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 tbsp grated fresh ginger
  • 1 tsp turmeric
  • 1 tsp paprika
  • 1 cup jasmine or basmati rice, rinsed
  • 2 cups low sodium chicken broth
  • 2 cups fresh spinach
  • Juice of ½ lemon
  • Salt and black pepper, to taste
  • 2 tbsp Greek yogurt for serving (optional)

Instructions

  1. Heat the olive oil in a large pan over medium heat. Add the chicken pieces and cook until lightly browned, about 5-7 minutes.
  2. Add the diced onion, minced garlic, and grated ginger. Stir until the onion softens and becomes fragrant.
  3. Sprinkle the turmeric, paprika, salt, and pepper over the chicken, mixing well.
  4. Pour in the rinsed rice and toss to combine.
  5. Carefully add the chicken broth and bring to a gentle boil. Reduce heat to low, cover, and cook for about 15 minutes or until the rice is tender.
  6. Stir in the spinach until it wilts, then squeeze in the lemon juice and adjust seasonings as needed.
  7. Serve topped with Greek yogurt if desired.

Notes

For added flavor, consider using fresh herbs for garnishing and serve with a side salad or roasted vegetables.
