Description

This Turtle Caramel Chocolate Cake Roll is an indulgent dessert dream rich chocolate sponge filled with gooey caramel cream, rolled and topped with chocolate ganache, toasted pecans, and a drizzle of caramel sauce.


Ingredients

For the Chocolate Sponge Cake:

4 large eggs

3/4 cup granulated sugar

1 tsp vanilla extract

1/3 cup all-purpose flour

1/4 cup cocoa powder

1/2 tsp baking powder

Pinch of salt

For the Caramel Cream Filling:

1/2 cup caramel sauce (plus more for drizzle)

1 cup heavy whipping cream

1/4 cup powdered sugar

1/2 tsp vanilla extract

1/2 cup chopped toasted pecans

For the Ganache Topping:

4 oz semi-sweet chocolate, chopped

1/2 cup heavy cream

1/4 cup chopped pecans, for garnish

Extra caramel drizzle, for serving


Instructions

1. Preheat oven to 350°F (175°C). Line a 10×15-inch jelly roll pan with parchment paper and lightly grease it.

2. In a large bowl, beat eggs, sugar, and vanilla for 3–4 minutes until thick and pale.

3. Sift together flour, cocoa, baking powder, and salt. Gently fold into the egg mixture until smooth.

4. Spread evenly in the pan and bake for 10–12 minutes or until springy to the touch.

5. Immediately turn cake out onto a clean towel dusted with powdered sugar, remove parchment, and roll up with the towel from the short end. Cool completely.

6. For filling, whip cream, powdered sugar, and vanilla to stiff peaks. Fold in caramel sauce and pecans.

7. Unroll cooled cake and spread filling evenly. Re-roll tightly and trim edges.

8. For ganache, heat cream until hot but not boiling. Pour over chopped chocolate and let sit for 1 minute, then stir until smooth.

9. Spread ganache over the top of the roll. Sprinkle with pecans and drizzle with caramel.

10. Chill for 30 minutes before slicing and serving.

Notes

Use homemade or store-bought caramel sauce.

Can be made a day ahead and stored in the fridge.

Top with whipped cream or chocolate curls for a decadent presentation.
