Description
A vibrant and festive winter salad featuring mixed greens, juicy pears, dried cranberries, candied pecans, and creamy feta, all tossed in a homemade honey-balsamic dressing perfect for the holidays!
Ingredients
6 cups mixed salad greens (arugula, spinach, or spring mix)
1 pear, thinly sliced
1/3 cup dried cranberries
1/3 cup candied pecans (or walnuts)
1/4 cup crumbled feta or goat cheese
1/4 red onion, thinly sliced
Dressing:
3 tbsp olive oil
1 tbsp balsamic vinegar
1 tsp Dijon mustard
1 tsp honey
Salt and black pepper, to taste
Instructions
1. In a small jar or bowl, whisk together olive oil, balsamic vinegar, Dijon mustard, honey, salt, and pepper until well combined.
2. In a large bowl, combine greens, pears, cranberries, pecans, feta, and red onion.
3. Drizzle dressing over the salad just before serving.
4. Toss gently to coat and serve immediately.
Notes
For extra crunch, add pomegranate seeds or roasted pumpkin seeds.
Swap pears for apples if desired.
The dressing can be made ahead and stored in the fridge for up to 1 week.
