Ingredients

- 1 cup orzo pasta
- 1 lemon (juice and zest)
- 1 cup cherry tomatoes, halved
- 1/2 cucumber, diced
- 1/4 red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Cook the orzo pasta in salted boiling water according to package instructions until al dente.
- Drain and rinse under cold water.
- In a large bowl, combine the cooked orzo, cherry tomatoes, cucumber, red onion, and parsley.
- In a separate bowl, whisk together the lemon juice, lemon zest, olive oil, salt, and pepper.
- Pour the dressing over the salad and toss gently to combine.
- Serve chilled or at room temperature.
Notes
For added crunch, consider including bell peppers or radishes. For more protein, add cooked chicken or chickpeas.
