- 1 cup pumpkin seeds
- 1/2 cup dried cranberries
- 1/2 cup almond butter or peanut butter
- 1/4 cup honey or maple syrup
- 1 cup rolled oats
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- In a large bowl, combine the pumpkin seeds, dried cranberries, almond butter, honey, rolled oats, vanilla extract, and salt.
- Mix everything until well combined.
- Using your hands, roll the mixture into small balls, about 1 inch in diameter.
- Place the energy balls on a baking sheet lined with parchment paper.
- Chill in the refrigerator for about 30 minutes to set.
- Enjoy as a quick snack!
