Ingredients

- 1 tablespoon olive oil
- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, diced
- 3 garlic cloves, minced
- 1 teaspoon fresh ginger, grated
- 8 cups chicken broth
- 2 cups cooked chicken, shredded
- 1 teaspoon turmeric
- 1 teaspoon cumin
- Salt and pepper, to taste
- 2 cups kale or spinach
- Juice of 1 lemon
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the chopped onions, sliced carrots, and diced celery, and sauté until softened, about 5-7 minutes.
- Stir in the minced garlic and grated ginger, cooking for another minute until fragrant.
- Pour in the chicken broth and bring it to a boil.
- Add the cooked shredded chicken, turmeric, and cumin, seasoning with salt and pepper to taste.
- Reduce the heat and let it simmer for about 15 minutes to meld the flavors.
- Stir in the kale or spinach and lemon juice just before serving.
Notes
Serve with crusty bread or a simple green salad. Can be customized with different vegetables or a vegetarian version using chickpeas.
