Ingredients

  • 4 chicken breasts
  • 2 Granny Smith apples, diced
  • 1 cup Brie cheese, cubed
  • 1/4 cup maple syrup
  • 2 tablespoons Dijon mustard
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Using a knife, create a pocket in each chicken breast.
  3. Stuff each pocket with the diced Granny Smith apples and cubed Brie cheese.
  4. Season the chicken breasts with salt and pepper.
  5. In a small bowl, whisk together the maple syrup and Dijon mustard.
  6. Heat olive oil in a skillet over medium-high heat.
  7. Sear the stuffed chicken breasts for 3-4 minutes on each side.
  8. Transfer the chicken to a baking dish, drizzle with the maple Dijon glaze, and bake for 25-30 minutes until cooked through.
