Description

Ingredients

  • 4 large eggs
  • 4 slices whole-grain or sourdough bread

  • 1/4 tsp freshly ground black pepper
  • 1 tbsp freshly squeezed lemon juice

Instructions

  1. Toast the bread slices in a toaster until they’re golden brown and crispy.
  2. Cut the avocados in half, scoop the flesh into a bowl, and mash it lightly with a fork. Stir in the kosher salt, black pepper, and freshly squeezed lemon juice.
  3. Poach the eggs in a small pot of simmering water for about 3 minutes.
  4. Spread the mashed avocado generously on each slice of toast.
  5. Top each slice with a poached egg.
  6. Sprinkle additional salt and pepper if desired, and add toppings like chili flakes or crumbled feta.
