Description

A delicious and trendy dish featuring creamy feta and roasted cherry tomatoes over your choice of pasta.


Ingredients

  • 8 ounces pasta of choice
  • 200 grams feta cheese
  • 1 pint cherry tomatoes
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Grab a baking dish and combine the cherry tomatoes, olive oil, minced garlic, salt, and pepper.
  3. Place the block of feta cheese right in the center of the baking dish.
  4. Bake everything for about 25-30 minutes, until the tomatoes burst and the feta turns golden and creamy.
  5. While that’s happening, cook your pasta according to the package instructions. Drain it and set it aside.
  6. Once the feta and tomatoes are roasted, mash them together in the dish until you form a creamy sauce.
  7. Stir in the cooked pasta, mixing everything together so it’s well combined.
  8. Top with fresh basil before serving for that beautiful pop of color.

Notes

This dish can be served on its own, with a salad, or some garlic bread. Store leftovers in an airtight container for 3-5 days.
