- 8 ounces pasta of choice
- 200 grams feta cheese
- 1 pint cherry tomatoes
- 3 tablespoons olive oil
- 3 cloves garlic, minced
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- Grab a baking dish and combine the cherry tomatoes, olive oil, minced garlic, salt, and pepper.
- Place the block of feta cheese right in the center of the baking dish.
- Bake everything for about 25-30 minutes, until the tomatoes burst and the feta turns golden and creamy.
- While that’s happening, cook your pasta according to the package instructions. Drain it and set it aside.
- Once the feta and tomatoes are roasted, mash them together in the dish until you form a creamy sauce.
- Stir in the cooked pasta, mixing everything together so it’s well combined.
- Top with fresh basil before serving for that beautiful pop of color.
Notes
This dish can be served on its own, with a salad, or some garlic bread. Store leftovers in an airtight container for 3-5 days.
