- 1 cup all-purpose flour (or almond flour for gluten-free)
- 1/2 cup granulated sugar (or coconut sugar)
- 1/4 cup unsalted butter, softened (or plant-based butter)
- 1 large egg (or 1/4 cup applesauce)
- 1/3 cup milk (almond or oat milk)
- 1 tsp vanilla extract
- 1 tsp baking powder
- 1/4 tsp salt
Instructions
- Preheat your oven to 350°F (175°C) and prepare your cake pan with parchment paper.
- Cream the softened butter and granulated sugar together until light and fluffy, then add the egg and vanilla extract and mix well.
- Whisk the flour, baking powder, and salt together in a separate bowl, then gradually add to the wet mixture, alternating with the milk.
- Pour the batter into the prepared cake pan and bake for about 22-25 minutes.
- Cool the cake in the pan for 10 minutes, then transfer to a wire rack to cool completely. Level and slice into layers once cool.
- Beat the softened butter for frosting until creamy, then gradually mix in powdered sugar and vanilla extract. Color some of the frosting if desired.
- Layer frosting between cake layers, apply a crumb coat, and chill for 30 minutes.
- Decorate with final frosting, sprinkles, berries, or other decorations, and serve.
Notes
Use room temperature ingredients for better blending, and do not skip the chilling step for frosting.
