Delicious Vegetable Lasagna

Description

A hearty and flavorful vegetable lasagna, perfect for a cozy dinner.


Ingredients

Scale
  • 12 lasagna noodles
  • 2 cups ricotta cheese
  • 1 egg
  • 4 cups spinach
  • 2 cups marinara sauce
  • 3 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 1 cup chopped bell peppers
  • 1 cup chopped mushrooms
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to the package instructions.
  3. In a bowl, mix the ricotta cheese, egg, salt, pepper, and Italian seasoning.
  4. Layer 1/3 of the marinara sauce in the bottom of a baking dish.
  5. Place 4 lasagna noodles over the sauce.
  6. Spoon half of the ricotta mixture over the noodles.
  7. Add half of the spinach, bell peppers, and mushrooms.
  8. Sprinkle with 1 cup of mozzarella cheese.
  9. Repeat the layers (sauce, noodles, ricotta mixture, vegetables, mozzarella).
  10. Top with remaining noodles, sauce, mozzarella, and Parmesan cheese.
  11. Cover with foil and bake for 25 minutes.
  12. Remove the foil and bake for another 15 minutes until golden and bubbly.
  13. Let it cool for 10 minutes before serving.
