Description
Festive, buttery Christmas cookies with a soft center, filled with sweet raspberry jam and dusted with powdered sugar a classic holiday favorite perfect for cookie trays.
Ingredients
1 cup unsalted butter, softened
2/3 cup granulated sugar
1 large egg
1 tsp vanilla extract
2 1/4 cups all-purpose flour
1/4 tsp salt
1/2 cup raspberry jam
1/2 cup powdered sugar (for dusting)
Instructions
1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
2. In a large bowl, cream butter and granulated sugar until light and fluffy.
3. Beat in egg and vanilla extract until fully combined.
4. Gradually mix in flour and salt until a soft dough forms.
5. Roll dough into 1-inch balls and place on prepared baking sheet.
6. Use your thumb or the back of a spoon to make an indentation in the center of each cookie.
7. Fill each indentation with raspberry jam.
8. Bake for 13–15 minutes until bottoms are lightly golden.
9. Cool on baking sheet for 5 minutes, then transfer to a wire rack.
10. Once cooled, dust generously with powdered sugar before serving.
Notes
Chill the dough for 20 minutes if it becomes too soft to handle.
Seedless raspberry jam gives the cleanest look.
These cookies are perfect for holiday gifting and freeze well without powdered sugar.
