Ingredients

  • 2 cups unsweetened almond milk
  • 1 banana (mashed)
  • ½ cup frozen blueberries
  • 2 Tbsp ground flaxseeds
  • 2 Tbsp maple syrup
  • ½ tsp pure vanilla extract
  • ⅛ tsp almond extract
  • 1 banana (sliced for topping)
  • ½ cup fresh blueberries (for topping)
  • ½ cup unsweetened coconut yogurt
  • 3 Tbsp almond butter

Instructions

  1. Combine the oats, almond milk, mashed banana, frozen blueberries, and ground flaxseeds in a saucepan. Bring the mixture to a gentle boil, then reduce the heat to a simmer.
  2. Let it simmer for about 7 minutes, stirring occasionally to prevent the oats from sticking or burning.
  3. Take the pan off the heat and stir in the maple syrup, pure vanilla extract, and almond extract for added sweetness.
  4. Divide the oatmeal into bowls and top with banana slices, fresh blueberries, coconut yogurt, and a dollop of almond butter. Enjoy!

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. For longer storage, freeze portions and thaw before reheating.
