- 1½ cups plain Greek yogurt
- 1 tablespoon honey or maple syrup
- ½ teaspoon vanilla extract
- ¾ cup fresh or frozen blueberries
- 1 teaspoon lemon juice
- 1 teaspoon honey (optional)
- 1 teaspoon chia seeds (optional)
Instructions
- Prepare the Blueberry Compote: In a small saucepan over medium heat, combine the blueberries, lemon juice, and optional honey. Cook for 5-6 minutes until the blueberries soften, then mash them lightly. Set aside to cool.
- Make the Yogurt Base: In a medium bowl, whisk together the Greek yogurt, vanilla extract, and honey until smooth and creamy. Adjust sweetness to your preference.
- Assemble the Bites: Spoon the yogurt mixture into silicone mini muffin or ice cube trays, filling them about ¾ full. Add the cooled blueberry compote on top and gently swirl.
- Freeze: Place the tray flat in the freezer for at least 120 minutes or until the bites are firm.
- Serve & Store: Once frozen, remove bites from the molds and store in an airtight container in the freezer. Thaw slightly before serving.
