Ingredients

  • 3/4 cup frozen blueberries
  • 2 cups creamy non-dairy milk
  • 1 tablespoon grade A maple syrup
  • 1 teaspoon vanilla extract
  • Juice of 1/2 small lemon
  • 1/4 teaspoon kosher salt
  • 2 cups rolled oats
  • 2 tablespoons chia seeds
  • Optional: 1/4 teaspoon cinnamon and/or cardamom
  • Optional toppings: extra blueberries, pumpkin seeds, hemp hearts, nut butter

Instructions

  1. Make the Blueberry Milk: Blend the frozen blueberries with non-dairy milk, maple syrup, vanilla extract, lemon juice, and a pinch of salt until smooth.
  2. Mix: In a bowl, combine the rolled oats and chia seeds. Pour in the blueberry milk and stir until fully mixed. Let sit for at least 5 minutes.
  3. Store & Serve: Transfer mixture into jars or containers. Refrigerate for at least 4 hours or overnight. Serve topped with extra blueberries or your favorite toppings.

Notes

Use frozen blueberries for a creamy texture. Adjust sweetness as desired.
