Ingredients

  • 4 pieces boneless, skinless chicken breasts (about 1.5 pounds total)
  • 1 cup fresh blueberries
  • 1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)
  • 3 tablespoons honey
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 0.5 teaspoon salt
  • 0.25 teaspoon pepper
  • 1 medium lemon (juice of 1 lemon)

Instructions

  1. Pound the chicken to an even thickness of about ½ inch and season with salt and pepper.
  2. Heat olive oil in a skillet over medium-high heat and cook the chicken for 6-7 minutes on each side until golden brown and cooked through.
  3. Remove the chicken from the skillet and set it aside.
  4. Sauté minced garlic in the same skillet for about 30 seconds until fragrant.
  5. Add blueberries, honey, thyme, and lemon juice; cook for 5-7 minutes until sauce thickens and blueberries soften.
  6. Return the chicken to the skillet and spoon the blueberry sauce over it; simmer for 2-3 minutes.
  7. Serve warm, garnished with thyme or lemon zest.

Notes

For a delightful side, serve with jasmine rice, mashed potatoes, or a fresh salad. Leftovers can be stored in an airtight container for up to 3 days.
