- 4 pieces boneless, skinless chicken breasts (about 1.5 pounds total)
- 1 cup fresh blueberries
- 1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)
- 3 tablespoons honey
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 0.5 teaspoon salt
- 0.25 teaspoon pepper
- 1 medium lemon (juice of 1 lemon)
Instructions
- Pound the chicken to an even thickness of about ½ inch and season with salt and pepper.
- Heat olive oil in a skillet over medium-high heat and cook the chicken for 6-7 minutes on each side until golden brown and cooked through.
- Remove the chicken from the skillet and set it aside.
- Sauté minced garlic in the same skillet for about 30 seconds until fragrant.
- Add blueberries, honey, thyme, and lemon juice; cook for 5-7 minutes until sauce thickens and blueberries soften.
- Return the chicken to the skillet and spoon the blueberry sauce over it; simmer for 2-3 minutes.
- Serve warm, garnished with thyme or lemon zest.
Notes
For a delightful side, serve with jasmine rice, mashed potatoes, or a fresh salad. Leftovers can be stored in an airtight container for up to 3 days.
