Description

A refreshing and delicious treat made with creamy Greek yogurt and fresh blueberries, perfect for summer snacking.

Ingredients

Scale
  • 2 cups fresh blueberries
  • 1½ cups plain Greek yogurt
  • ½ teaspoon vanilla extract
  • ¼ cup powdered sugar (or 23 tbsp honey/maple syrup, to taste)

Instructions

  1. Start by lining a baking sheet with parchment paper.
  2. Mix the Greek yogurt, vanilla extract, and your choice of sweetener until smooth and thick.
  3. Fold in the fresh blueberries carefully.
  4. Spread the yogurt and blueberry mixture evenly on the prepared baking sheet.
  5. Place the baking sheet in the freezer and let it freeze until firm, about 2 to 3 hours.
  6. Break the bark into pieces and serve immediately or store for later.

Notes

For best results, use fresh blueberries and adjust sweetness to taste. An even spread will help it freeze uniformly.
