Description
A colorful and flavorful Bow Tie Pasta Salad that’s perfect for casual gatherings and potlucks.
Ingredients
Scale
- 12 ounces bow tie pasta, dry
- 2 cups cherry tomatoes, halved
- 1/4 cup red onion, diced
- 1 cup bocconcini cheese, halved
- 1 cup spinach, packed, finely chopped
- 1/2 cup basil, finely chopped
- 3 tablespoons pesto
- 2 tablespoons olive oil
- 1/2 lemon, juiced
- Salt, to taste
- Black pepper, to taste
Instructions
- Start by cooking the bow tie pasta according to the package instructions. Once it’s al dente, drain the pasta and let it cool completely.
- In a large bowl, combine the cooled pasta with cherry tomatoes, diced red onion, bocconcini cheese, chopped spinach, and basil. Mix well to ensure all the ingredients are evenly distributed.
- In a smaller bowl, whisk together pesto, olive oil, lemon juice, salt, and black pepper until well combined. This dressing adds a burst of flavor to your salad.
- Pour the dressing over the pasta mixture and toss everything until evenly coated.
- Serve your pasta salad chilled or at room temperature. It’s delicious either way!
Notes
Store leftovers in an airtight container in the fridge for up to three days. The pasta may absorb some dressing, so add extra olive oil or lemon juice before serving.
