Ingredients
- Rice paper wrappers
- Bell peppers (red, yellow, green)
- Cucumber
- Carrots
- Avocado
- Fresh herbs (basil, mint, cilantro)
- Peanut butter
- Soy sauce
- Lime juice
- Water
Instructions
- Start by preparing your vegetables. Slice the bell peppers, cucumber, and carrots into thin strips.
- In a small bowl, combine peanut butter, soy sauce, and lime juice. Mix to create a delicious dipping sauce.
- Fill a shallow dish with warm water. Soak one rice paper wrapper for about 10-15 seconds.
- Place the softened wrapper on a clean surface. Lay your sliced vegetables and a few fresh herbs down the center of the wrapper.
- Once you have everything lined up, fold the sides of the rice paper over the filling, then roll it up tightly from the bottom to the top.
- Repeat this process with the remaining wrappers and fillings until you’ve created a colorful platter of rolls.
- Serve them up with the peanut dipping sauce on the side, and enjoy!
