  • Soy sauce
  • Lime juice
  • Water

Instructions

  1. Start by preparing your vegetables. Slice the bell peppers, cucumber, and carrots into thin strips.
  2. In a small bowl, combine peanut butter, soy sauce, and lime juice. Mix to create a delicious dipping sauce.
  3. Fill a shallow dish with warm water. Soak one rice paper wrapper for about 10-15 seconds.
  4. Place the softened wrapper on a clean surface. Lay your sliced vegetables and a few fresh herbs down the center of the wrapper.
  5. Once you have everything lined up, fold the sides of the rice paper over the filling, then roll it up tightly from the bottom to the top.
  6. Repeat this process with the remaining wrappers and fillings until you’ve created a colorful platter of rolls.
  7. Serve them up with the peanut dipping sauce on the side, and enjoy!
