Description

A cozy and satisfying pasta dish featuring tender pasta, vibrant broccoli, and hearty chickpeas, flavored with garlic and olive oil.


Ingredients

  • 250g Pasta (penne, rotini, or fusilli)
  • 300g Broccoli Florets (fresh or frozen)
  • 1 can (400g) Chickpeas, drained & rinsed
  • 45 cloves Garlic, minced
  • 60ml Olive Oil
  • ¼ teaspoon Red Pepper Flakes
  • 60ml Vegetable Broth
  • 1 tablespoon Lemon Juice
  • 30g Grated Parmesan Cheese (optional)
  • Salt & Black Pepper to taste

Instructions

  1. Cook the Pasta: Start by bringing a large pot of water to a boil. Add your pasta and cook until al dente, which usually takes about 8-10 minutes. Before draining, make sure to reserve about 1/2 cup of that valuable pasta water.
  2. Sauté Garlic and Red Pepper Flakes: While your pasta cooks, heat olive oil in a pan over medium heat. Add minced garlic and red pepper flakes, sautéing for about a minute until you catch a beautiful aroma.
  3. Add the Broccoli: Toss in the broccoli florets into your pan. Cook them for about 5-7 minutes. You want them to be tender yet still vibrant and green—nobody wants mushy broccoli!
  4. Introduce Chickpeas and More: Stir in your drained chickpeas, vegetable broth, and lemon juice. Let this mixture simmer for another 2-3 minutes, allowing those flavors to meld beautifully.
  5. Combine Pasta with the Mixture: Now it’s time to unite the stars of the show! Add the drained pasta to your sautéed mixture, tossing everything together to coat well. Gradually add the reserved pasta water until you reach your desired consistency, adding more or less as you prefer.
  6. Season and Serve: Finish off with a sprinkle of salt and pepper according to your taste. If you like, you can also add some grated Parmesan cheese before serving it warm.

Notes

Store any leftovers in an airtight container for up to 3-4 days in the fridge or freeze for up to 2 months. Reheat gently with a splash of water if needed.
