- 2 chicken breasts, diced
- 2 cups cherry tomatoes, halved
- 1/4 cup fresh basil, chopped
- 3 cloves garlic, minced
- 1/4 cup olive oil
- Salt and pepper to taste
- Parmesan cheese for topping (optional)
Instructions
- Cook the pasta according to the package instructions. Once it’s al dente, drain it but save a little pasta water for later—just a splash will do. Set the pasta aside.
- Sauté the chicken in a large skillet with olive oil over medium heat. Season it with salt and pepper, cooking until golden brown and cooked through.
- Add the minced garlic and cook for an extra minute until fragrant.
- Toss in the halved cherry tomatoes and let them cook until softened, releasing their juices.
- Combine the cooked pasta with the chicken and tomato mixture, adding reserved pasta water if needed. Stir in chopped fresh basil and adjust seasoning.
- Serve warm, topped with grated Parmesan cheese if desired.
Notes
For best results, use fresh ingredients and adjust seasonings to taste. Serve with a salad and garlic bread.
