Description

Ingredients

  • 8 oz pasta
  • 2 chicken breasts, diced
  • 2 cups cherry tomatoes, halved
  • 1/4 cup fresh basil, chopped
  • 3 cloves garlic, minced
  • 1/4 cup olive oil
  • Salt and pepper to taste
  • Parmesan cheese for topping (optional)

Instructions

  1. Cook the pasta according to the package instructions. Once it’s al dente, drain it but save a little pasta water for later—just a splash will do. Set the pasta aside.
  2. Sauté the chicken in a large skillet with olive oil over medium heat. Season it with salt and pepper, cooking until golden brown and cooked through.
  3. Add the minced garlic and cook for an extra minute until fragrant.
  4. Toss in the halved cherry tomatoes and let them cook until softened, releasing their juices.
  5. Combine the cooked pasta with the chicken and tomato mixture, adding reserved pasta water if needed. Stir in chopped fresh basil and adjust seasoning.
  6. Serve warm, topped with grated Parmesan cheese if desired.

Notes

For best results, use fresh ingredients and adjust seasonings to taste. Serve with a salad and garlic bread.
