Ingredients

  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 12 oz bowtie (farfalle) pasta
  • 2 cups broccoli florets
  • 1 tsp Cajun seasoning
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika
  • Salt to taste
  • Black pepper to taste
  • 1/2 tsp crushed red pepper flakes (optional)
  • 1 tsp Dijon mustard
  • Juice and zest of 1 lemon
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp fresh chives, chopped
  • 2 tbsp olive oil
  • 6 tbsp unsalted butter
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup reserved pasta water

Instructions

  1. Boil a large pot of salted water. Cook bowtie pasta according to package instructions for 10-12 minutes, adding broccoli florets during the last 3 minutes. Reserve 1/2 cup of pasta water, then drain.
  2. Heat olive oil in a large sauté pan over medium heat. Season chicken with Cajun seasoning, garlic powder, smoked paprika, salt, and pepper. Cook chicken for 5-7 minutes until golden brown and cooked through.
  3. Add unsalted butter to the pan and let melt. Stir in lemon juice, lemon zest, and Dijon mustard, adding red pepper flakes if desired. Simmer for 1-2 minutes.
  4. Combine drained pasta and broccoli with the sauce and chicken. Gradually add reserved pasta water until reaching desired consistency. Stir in the Parmesan cheese until melted.
  5. Garnish with chopped parsley and chives before serving.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days, or freeze for up to 2 months. Reheat on the stovetop with a splash of water or broth.
