Ingredients

- 8 oz pasta (penne or fusilli)
- 1 lb smoked sausage (sliced)
- 1 tablespoon Cajun seasoning
- 1 cup heavy cream
- 1 cup shredded cheese (cheddar or mozzarella)
- 1 tablespoon olive oil
- 1 onion (chopped)
- 2 cloves garlic (minced)
- 1 bell pepper (chopped)
- Salt and pepper to taste
- Chopped parsley for garnish (optional)
Instructions
- In a large pot, heat olive oil over medium heat.
- Add chopped onion, bell pepper, and minced garlic, and sauté until soft.
- Add sliced sausage and cook until browned.
- Stir in the Cajun seasoning.
- Add the pasta and enough water or broth to cover it. Bring to a boil.
- Reduce the heat and simmer until pasta is cooked.
- Stir in heavy cream and cheese until melted and creamy.
- Season with salt and pepper to taste.
- Garnish with chopped parsley if desired before serving.
Notes
For an extra kick, add more Cajun seasoning or a dash of hot sauce. Can be made with turkey sausage for a lighter version.
