Ingredients
2 cups graham cracker crumbs
1/2 cup unsalted butter, melted
2 tbsp brown sugar
16 oz cream cheese, softened
3/4 cup granulated sugar
2 large eggs
1 tsp vanilla extract
2 cups apples, peeled and diced
1 tsp cinnamon
1/4 tsp nutmeg
2 tbsp granulated sugar
1/2 cup caramel sauce
Instructions
1. Preheat oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
2. Mix graham cracker crumbs, melted butter, and brown sugar; press firmly into the pan.
3. Bake crust for 10 minutes and set aside.
4. In a bowl, beat cream cheese and sugar until smooth.
5. Add eggs one at a time, then mix in vanilla.
6. Pour cheesecake mixture over the baked crust.
7. In another bowl, toss apples with cinnamon, nutmeg, and sugar.
8. Spoon apples evenly over the cheesecake layer.
9. Bake for 40–45 minutes until center is set.
10. Cool completely, then drizzle with caramel sauce.
11. Chill for at least 2 hours before slicing into bars.
Notes
Use Granny Smith apples for best balance of sweet and tart.
Bars slice cleanly when fully chilled.
Store leftovers refrigerated for up to 4 days.
