Caribbean Chicken and Rice

Description

A warm and comforting one-pot meal featuring juicy chicken, coconut milk, and fragrant spices, perfect for any day of the week.


Ingredients

  • 2 cups of jasmine rice
  • 4 chicken thighs (skinless)
  • 1 can of coconut milk
  • 2 cups of chicken broth
  • 1 onion, chopped
  • 3 cloves of garlic, minced
  • 1 bell pepper, chopped
  • 2 teaspoons of curry powder
  • 1 teaspoon of paprika
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat a few tablespoons of oil in a large pot over medium heat.
  2. Add the chopped onion, minced garlic, and chopped bell pepper to the pot. Sauté for 3-5 minutes until softened.
  3. Add the chicken thighs to the pot and brown them on both sides for about 5-7 minutes.
  4. Sprinkle in the curry powder, paprika, salt, and pepper. Stir to coat the chicken and vegetables with the spices.
  5. Pour in the jasmine rice, coconut milk, and chicken broth. Stir well.
  6. Increase the heat to bring it to a boil.
  7. Once boiling, reduce the heat to low, cover, and simmer for 20-25 minutes until the rice is tender and the chicken is cooked through.
  8. Let it sit for a few minutes before serving. Garnish with fresh cilantro.

Notes

For more flavor, consider using bone-in chicken thighs. Adjust cooking time if using brown rice as it takes longer to cook.
