Description

These Carrot Cake Energy Balls are a healthy snack that combines the sweetness of medjool dates with the warmth of cinnamon and nutmeg, perfect for quick energy boosts or guilt-free desserts.


Ingredients

  • 1 cup medjool dates (pits removed)
  • 1/3 cup shredded carrots
  • 1 cup walnuts
  • 1 tbsp chia seeds
  • 1/3 cup shredded unsweetened coconut
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • Pinch of salt
  • 1 tsp vanilla extract
  • 1/2 cup shredded coconut (for rolling)

Instructions

  1. Add all the ingredients to a food processor and pulse until combined, leaving some texture.
  2. Scoop out some dough using a spoon and roll it into balls (about the size of a tablespoon).
  3. Roll each ball into the shredded coconut to coat evenly.
  4. Place the balls in the fridge to firm up for at least one hour before enjoying.

Notes

Store in an airtight container in the fridge for up to a week or freeze for up to three months. Thaw in the fridge overnight before enjoying.
