- 1/3 cup shredded carrots
- 1 cup walnuts
- 1 tbsp chia seeds
- 1/3 cup shredded unsweetened coconut
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- Pinch of salt
- 1 tsp vanilla extract
- 1/2 cup shredded coconut (for rolling)
Instructions
- Add all the ingredients to a food processor and pulse until combined, leaving some texture.
- Scoop out some dough using a spoon and roll it into balls (about the size of a tablespoon).
- Roll each ball into the shredded coconut to coat evenly.
- Place the balls in the fridge to firm up for at least one hour before enjoying.
Notes
Store in an airtight container in the fridge for up to a week or freeze for up to three months. Thaw in the fridge overnight before enjoying.
