This Cheddar and Herb Soda Bread is a quick, savory twist on the classic Irish favorite loaded with sharp cheddar, fresh herbs, and a golden, buttery crust. No yeast, no kneading, just simple homemade comfort.
Ingredients
3 cups all-purpose flour
1 tbsp baking powder
1 tsp baking soda
1 tsp salt
1/2 tsp garlic powder
1 1/2 cups shredded sharp cheddar cheese
2 tbsp chopped fresh parsley
1 tbsp chopped chives (optional)
1 1/4 cups buttermilk
1 large egg
3 tbsp melted butter (plus more for brushing)
Instructions
1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease a cast iron skillet.
2. In a large bowl, whisk together flour, baking powder, baking soda, salt, and garlic powder.
3. Stir in shredded cheddar and chopped herbs until evenly distributed.
4. In a separate bowl, whisk together buttermilk, egg, and melted butter.
5. Pour the wet ingredients into the dry and stir just until a shaggy dough forms — do not overmix.
6. Turn the dough out onto a lightly floured surface and gently shape it into a round loaf (about 7 inches across).
7. Place the loaf on the prepared baking sheet and use a sharp knife to cut a deep cross into the top.
8. Brush lightly with extra melted butter.
9. Bake for 35–40 minutes, or until golden brown and a toothpick inserted in the center comes out clean.
10. Cool on a wire rack for 10 minutes before slicing.
Notes
This bread is best served warm with butter or alongside soups and stews.
You can swap herbs for rosemary, thyme, or dill depending on your preference.
Add a pinch of cayenne or smoked paprika for a subtle kick.
