- 4 chicken breasts
- 1 cup mushrooms, chopped
- 4 tablespoons garlic, minced
- 4 tablespoons butter
- 1 cup shredded cheese (e.g., mozzarella or cheddar)
- Salt and pepper to taste
- 1 tablespoon olive oil
- 1 teaspoon Italian seasoning
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet, heat the olive oil over medium heat.
- Add the chopped mushrooms and minced garlic to the skillet and sauté until the mushrooms turn golden brown.
- Season the mixture with salt, pepper, and Italian seasoning, then set it aside to cool slightly.
- Create pockets in the chicken breasts by slicing them horizontally, being careful not to cut all the way through.
- Stuff the pockets with the mushroom mixture.
- In the same skillet, melt the butter and pour it over the stuffed chicken.
- Place the chicken in a baking dish and sprinkle the shredded cheese on top.
- Bake for 25-30 minutes until the chicken is cooked through, and the cheese is bubbly.
