Ingredients

  • 2 boneless, skinless chicken breasts
  • ¼ cup honey
  • ¼ cup lime juice
  • 1 ripe avocado, sliced
  • ¼ cup fresh cilantro, chopped
  • 1 cup rice (white or brown)
  • 1 cup lettuce, shredded
  • 1 medium tomato, diced
  • Dressing (e.g., vinaigrette) to drizzle on top

Instructions

  1. Start by marinating the chicken breasts. In a bowl, combine honey and lime juice, then add the chicken. Make sure it’s coated well. Let it marinate for at least 30 minutes.
  2. After marinating, preheat your grill or grill pan. Grill the chicken for about 6 to 7 minutes on each side or until it’s cooked through.
  3. While the chicken cooks, prepare the rice by following package instructions, adding a tablespoon of chopped cilantro while it steams.
  4. Now assemble the bowl with a scoop of rice at the bottom, sliced grilled chicken on top, followed by lettuce, diced tomatoes, and avocado slices.
  5. Finally, drizzle your choice of dressing on top and serve.
