- 2 boneless, skinless chicken breasts
- ¼ cup honey
- ¼ cup lime juice
- 1 ripe avocado, sliced
- ¼ cup fresh cilantro, chopped
- 1 cup rice (white or brown)
- 1 cup lettuce, shredded
- 1 medium tomato, diced
- Dressing (e.g., vinaigrette) to drizzle on top
Instructions
- Start by marinating the chicken breasts. In a bowl, combine honey and lime juice, then add the chicken. Make sure it’s coated well. Let it marinate for at least 30 minutes.
- After marinating, preheat your grill or grill pan. Grill the chicken for about 6 to 7 minutes on each side or until it’s cooked through.
- While the chicken cooks, prepare the rice by following package instructions, adding a tablespoon of chopped cilantro while it steams.
- Now assemble the bowl with a scoop of rice at the bottom, sliced grilled chicken on top, followed by lettuce, diced tomatoes, and avocado slices.
- Finally, drizzle your choice of dressing on top and serve.
