- 2 cups cooked chicken, shredded
- 1 cup cheese, shredded (cheddar or mozzarella)
- 1/2 cup onion, finely chopped
- 1 clove garlic, minced
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- Empanada dough (store-bought or homemade)
- 1 egg (for egg wash, optional)
Instructions
- Preheat the oven to 400°F (200°C) or prepare your air fryer.
- Combine the shredded chicken, cheese, onion, garlic, cumin, paprika, salt, and pepper in a mixing bowl. Mix well until all ingredients are evenly distributed.
- Roll out the empanada dough on a floured surface and cut it into circles using a cookie cutter or a bowl.
- Place a spoonful of the chicken mixture in the center of each dough circle.
- Fold the dough over to create a half-moon shape and seal the edges by pressing them together. You can use a fork to make a decorative seal if you like.
- Brush the tops with egg wash for a beautiful golden finish if baking.
- Bake for about 20-25 minutes or until they turn a delightful golden brown. If using an air fryer, cook at 350°F (175°C) for about 12-15 minutes.
